"A Taste of the Caribbean": Barbecued Jerk Chicken



Hola amigos!
My name is Sarah and I am currently a student at the Unniversity of Louisisan at Lafayette. I am a former student of Mrs. Anderson (for two consecutive semesters) and I'd like to begin by sharing some information about myself. Although I spent eight years of my life livin in the great state of Ohio ( I used to collect buckeyes), I've had the pleasure to experience a variety of different cultures and various foods. Through the military I've had the opportunity to live in some really cool places. My absolute favorite place is Puerto Rico, and for this reason I'd like to share a little part of the Caribbean with you! With this being said, fire up your grill and get ready to lure your neighbors in with the aroma of barbecued jerk chicken.
Ingredient:
-4 boneless chicken breasts
-6 ounces of soy sauce
-4 ounces of white wine vinegar
-2 cloves of garlic, roughly chopped
-1 onion chopped
-2 ounces of vegetable oil
-2 tablespoons of brown sugar
-1 tablespoon of dried thyme
-1/2 teaspoon of allspice
-1/2 teaspoon of ground cloves
-1/2 teaspoon of ground nutmeg
-1 jalepeno pepper, roughly chopped
Directions:
To begin, place all of the ingredients, except the chicken, in a food processor and process until smooth. Next, make 4 parallel cuts about 1/2 inch deep in each chicken breast and place in a shallow dish. Pour the pureed mixture over the chicken and rub it in with your hands, making sure the mixture gets into the cuts. After doing this, cover and refrigerate for 4-6 hours. Lastly, grill over medium coals for 15-20 minutes turning occasionally.
